Canning Pickled Beets

Pickled Beets

From a peck of beets, I got 5 quarts of pickled beets!  I had to cut off all of my fingernails because they became a vivid shade of purple.  The hands were too but they cleaned up.  I had a great deal of fun so it was worth it!

Nice job. They look GREAT! I love pickled beets! Do you have to boil the beets first to make them?

Jena, I'm sorry that I missed this post. I scrubbed the beets with a brush, boiled them, slipped the skin off, cut them up and made a syrup to poar over them to can.
